Notes

Peaches: score the bottoms in an x pattern, boil for 1 minutes, then blanch in ice water. Peel the skin, cut peaches into small sections, and discard the pits. Pasteurize in 2c distilled water at 170F for 30 minutes. Pour peaches into primary fermenter and rack wort onto them before pitching yeast.
